Prawn Stir-fry with Turmeric Noodles

Ingredients for the Noodle sauce

-200g Organic Handmade Turmeric noodle 
-2 garlic (minced)
-2cm piece of fresh ginger (minced)
-1 chilli (diced) or 1 tsp of Sambal Oelek.
-2 sprigs of fresh parsley 
-2 tbsp oil
-1/2 tsp ground turmeric 
-1/2 tsp ground cumin
-3 tsp fish sauce
-2 tsp coconut sugar
-2 tsp lemon juice
-175g coconut milk

1. Cook noodles for 5 minutes. Drain then rinse with cold water. Set aside in a bowl. 
2. Put oil in your wok/pan and once hot, add all the sauce ingredients except for the coconut milk. Stir and sauté on medium-high heat for 2-3minutes. 
3. Add coconut milk and let simmer for approximately 6-7 minutes. 
4. Pour the sauce over the noodles and keep them warm. 

Ingredients for the Prawn Stir-fry.
-1 brown onion (cut in wedges)
-2 garlic (minced)
-2cm piece of fresh ginger (minced)
-2 tbsp oil
-4 baby capsicum 
-1 carrot
-150g zucchini (cut in small strips)
-350g medium raw prawns (peeled)
-3 tsp tamari sauce
-1 or 2 pinches of ground white pepper

1. Place olive oil in wok/pan on medium heat and add garlic, ginger, onion and sauté for a few minutes. 
2. Add capsicum, carrot and zucchini and cook for a further 3-4 minutes.
3. Add tamari sauce and prawns. Cook prawns for 3-4 minutes on each side.
4. Add pepper to taste.
