Apple and Carrot Cookies


  • 1 cup organic quick oats 
  • 1 cup wholemeal flour 
  • 1 tsp baking powder 
  • 1 tsp ground cinnamon 
  • 1 medium grated apple 
  • 1 large grated carrot 
  • ½ cup raisins 
  • ½ cup sunflower seeds 
  • ¼  cup organic coconut oil 
  • 1/3 cup organic raw honey 


  • Preheat the oven to 180 degrees and line a baking tray with baking paper 
  • Mix together all the ingredients in a large bowl and if needed, use your hands to bring everything together 
  • Portion out the prepared tray with 2tbsp size balls and press down to make them flatter; resembling a cookie 
  • Bake for 15-20 minutes or until golden brown 
  • These can be stored in an airtight container for up to 5 days in the fridge
